<p><span style="font-family: sarabun-regular; font-size: 12pt;"><span style="font-weight: 400;">สำหรับสายคาเฟ่และคอกาแฟ คงได้เห็นผลงาน </span><span style="font-weight: 400;">Harudot Chonburi by NANA Coffee Roasters ผ่านตาจากโซเชียลมีเดียอยู่บ้าง หรือบางคนก็อาจจะได้ไปเยี่ยมเยือนและสัมผัสกับความ ‘เซอร์ไพรส์’ ด้วยตัวเองมาเรียบร้อยแล้ว ซึ่งในวันนี้เราได้มีโอกาสพูดคุยกับเป้ – จีรเวช หงสกุล </span><span style="font-weight: 400;">ผู้ก่อตั้ง IDIN Architects และผู้ออกแบบคาเฟ่แห่งนี้เกี่ยวกับเรื่อง ‘พื้นๆ’ ทั้งในเรื่องพื้นฐานการออกแบบในโปรเจ็กต์ต่างๆ ของออฟฟิศ รวมไปถึงงานพื้น terrazzo ซึ่งได้รับการทดลอง ต่อยอด และพัฒนาลูกเล่นไปทีละขั้น จนเราได้เห็นศักยภาพของวัสดุพื้นชนิดนี้ว่ามีส่วนช่วยให้งาน Harudot Chonburi by NANA Coffee Roasters สนุกขึ้นได้อย่างไม่น่าเชื่อ</span></span></p>

<p><span style="font-weight: 400; font-family: sarabun-regular; font-size: 12pt;">เริ่มแรกเราได้ถามถึงแนวทางการทำงานและความเชื่อของ IDIN Architects ซึ่งจีรเวชได้อธิบายว่าไม่ได้โฟกัสที่อาคารประเภทใดเป็นพิเศษ แต่เน้นที่เนื้อหาและเรื่องราวของงานมากกว่า ด้วยการผสมผสานงานออกแบบเข้ากับธรรมชาติของสรรพสิ่งต่างๆ เป็นเสมือนสัจจะของเจ้าของและบริบทของโครงการ งานออกแบบแต่ละชิ้นจึงมีความหลากหลาย มีเอกลักษณ์ และแทรกซึมไปกับเรื่องราวของผู้คนและบริบท ลูกค้าที่เข้ามาจึงมักต้องการงานที่ต้องการคาแร็กเตอร์ชัดๆ ภาพจำที่ชัดเจน และมีประเด็นควรค่าให้เล่าผ่านงานออกแบบ</span></p>
<p><span style="font-weight: 400; font-family: sarabun-regular; font-size: 12pt;">แต่จากมุมมองของเรา สิ่งที่เห็นในแทบทุกผลงานของ IDIN Architects คือความเซอร์ไพรส์อย่างที่กล่าวไปข้างต้น เหมือนผู้ออกแบบกำลังเล่นสนุกกับประสบการณ์แบบไม่ทันตั้งตัวของผู้ใช้อาคาร ด้วยการเปลี่ยนคาแร็กเตอร์ระหว่างภายนอกและภายในอาคารให้มีความแตกต่างกันอย่างสิ้นเชิง หรือไม่ก็ปล่อยให้พวกเขาได้พบเจอกับสิ่งที่ซ่อนไว้ในรายละเอียดต่างๆ อยู่เสมอ และสี่ผลงานที่ถูกเลือกมาเล่านี้น่าจะช่วยให้ทุกคนเห็นภาพได้อย่างชัดเจนทีเดียว</span></p>
<h2><span style="font-family: rm-regular; font-size: 12pt; color: #000000;"><b>Modernism </b><b>Café</b></span></h2>
<p><span style="font-weight: 400; font-family: sarabun-regular; font-size: 12pt;">ร้านกาแฟ Modernism ที่ตั้งอยู่บริเวณส่วนหน้าของพื้นที่สำนักงาน IDIN Architects มีจุดตั้งต้นมาจากมุกตลกล้อเลียนชื่อ ผลงาน และโควตคำพูดของเหล่าสถาปนิกระดับปรมาจารย์ยุคโมเดิร์น ด้วยการเล่นคำจนกลายเป็นชื่อเมนูและสารพัดผลิตภัณฑ์ ซึ่งถ้าใครเรียนด้านสถาปัตย์มาก็คงจะเข้าใจได้ไม่ยาก แถมจะอินเป็นพิเศษด้วย</span></p>

<p><span style="font-weight: 400; font-family: sarabun-regular; font-size: 12pt;">“ถ้าสังเกตที่ร้านจะใช้วัสดุยุคโมเดิร์น พยายามจะอ้างอิงกลับไปที่วัสดุยุคนั้น ไม่ว่าจะเป็นการใช้กระจก เหล็กเริ่มมีบทบาท รอยสนิม และพื้นเลือกเป็น <span style="font-family: sarabun-regular; font-size: 12pt;"><span style="font-weight: 400;">terrazzo </span></span>เพราะคิดว่าคลาสสิกดี มีความเรโทรนิดๆ แต่มาทำให้ดูวัยรุ่นหน่อย อีกทั้งยังคุมธีมได้ด้วย เนื้อสีจะตรงข้ามกับ <span style="font-family: sarabun-regular; font-size: 12pt;"><span style="font-weight: 400;">terrazzo </span></span>ปกติ ที่ร้านใช้เป็นเนื้อสีดำผสมหินสีขาวทั้งเม็ดใหญ่เม็ดเล็ก ได้ผิวที่ชอบมากจนหลายคนที่มาเห็นก็บอกว่าอยากได้แบบนี้ แต่ไม่เคยผสมได้แบบนี้อีกเลย ทำอีกทีก็ไม่เหมือนเดิมแล้ว (หัวเราะ) เพราะขึ้นอยู่กับหินที่ตอนนั้นหาได้ ต่อให้ช่างคนเดิมทำก็ไม่เหมือน” จีรเวชเล่าถึงรายละเอียดของงานวัสดุที่แทบทุกระนาบปรากฏเป็นโทนสีดำดูเคร่งขรึม ตัดกับความสนุกที่ซ่อนอยู่ในเมนูและข้าวของตกแต่งภายในร้าน</span></p>

<p><span style="font-family: sarabun-regular; font-size: 12pt;"><span style="font-weight: 400;">จากเทรนด์ café hopping และความสำเร็จของแบรนด์จากการเป็นที่จดจำเรื่องความสวยงามของร้าน ทางเจ้าของโครงการจึงมอบโจทย์ให้ร้าน </span><span style="font-weight: 400;">NANA Coffee Roasters</span><span style="font-weight: 400;"> สาขาบางนานี้มีกาแฟเป็นพระเอก ซึ่ง</span><span style="font-weight: 400;">จีรเวช</span><span style="font-weight: 400;">เชื่อว่าคนเราจะดื่มด่ำไปกับกาแฟที่อยู่ตรงหน้าอย่างละเอียดลึกซึ้งได้ ก็ต้องเป็นตอนที่เราจดจ่อกับกาแฟแก้วนั้นโดยไม่มีอะไรมาดึงความสนใจของเราไป</span></span></p>

<p><span style="font-weight: 400; font-family: sarabun-regular; font-size: 12pt;">แม้จะเป็นร้านกาแฟเครือเดียวกัน แต่วิธีคิดแตกต่างจากโปรเจ็กต์ก่อนหน้าโดยสิ้นเชิง ร้านกาแฟ Harudot ซึ่งเป็นแบรนด์ย่อยของ NANA Coffee Roasters นี้ถือเป็นสาขาแรกของแบรนด์ที่ก้าวเท้าออกสู่พื้นที่ต่างจังหวัด งานนี้จึงมีโจทย์ให้สถาปัตยกรรมเป็นตัวดึงคนให้ต้องลองมาเยี่ยมเยือนสักครั้งให้ได้ พร้อมกับต้องถ่ายทอดเรื่องราวการคอลแล็บระหว่างเจ้าของที่ดินและแบรนด์เข้าไว้ด้วยกัน</span></p>

<p><span style="font-weight: 400; font-family: sarabun-regular; font-size: 12pt;">เจ้าของที่ดินแปลงนี้มีฟาร์ม exotic plant โดยหนึ่งในนั้นคือต้นเบาบับ ซึ่งถูกนำมาวางในพื้นที่ให้เหมือนกับถูกฝังเมล็ดไว้ในอาคาร ก่อนจะเติบโตจนแทงทะลุหลังคาออกมา ทางฝั่งแบรนด์เองก็มีชื่อที่ประสมคำภาษาญี่ปุ่นอยู่ ความเป็นญี่ปุ่นนี้ถูกตีความเป็นความเรียบง่ายที่แสดงออกผ่านอาคารทรงจั่วสีดำเรียบๆ สามหลังเชื่อมต่อกัน แต่ซ่อนความซับซ้อนและรายละเอียดต่างๆ เอาไว้ภายใน ซึ่งอัดแน่นด้วยลูกเล่นจากการออกแบบสเปซ การใช้วัสดุ และสีสันที่สร้างคาแร็กเตอร์ที่แตกต่างจากงานภายนอก</span></p>

</div></span><span style="font-weight: 400; font-family: sarabun-regular; font-size: 12pt;">คาแร็กเตอร์อันโดดเด่นชนิดที่ว่าเห็นรูปแวบเดียวก็รู้เลยว่าเป็นที่ไหน เกิดจากการผสมผสานของสีไม้สนที่มีความอบอุ่นนุ่มนวล และแพตเทิร์นของเส้นเฉียงซ้ำๆ ที่ไหลต่อเนื่องกันไปบนผืนผนัง รวมไปถึงความเรียบและต่อเนื่องเป็นเนื้อเดียวของพื้น <span style="font-family: sarabun-regular; font-size: 12pt;"><span style="font-weight: 400;">terrazzo </span></span>สีอ่อน ที่งานนี้เปลี่ยนข้อจำกัดของเส้นรอยต่อให้กลายเป็นส่วนหนึ่งของงานออกแบบ ด้วยการตัดรอยต่อของพื้นที่ให้เป็นทั้งเส้นขอบเขต เส้นนำทาง พร้อมแทรกข้อความด้วยการฝังตัวอักษรลงไปเป็นเนื้อเดียวกับพื้น ช่วยให้ตัวข้อความคงทนถาวร ไม่หลุดล่อนหรือเป็นคราบเหมือนสติกเกอร์ อีกทั้งยังสามารถฝังของประดับตกแต่งเพื่อเพิ่มดีเทลให้กับพื้นที่ได้ ซึ่งถ้าสังเกตรอบๆ ต้นไม้จะมีเรซินหล่อรูปใบไม้โปรยกระจายอยู่ในพื้นด้วย และยังมีรายละเอียดสนุกๆ อีกมากมายที่ซ่อนอยู่ไม่ว่าจะเป็นบนโต๊ะ บนผนัง เรียกว่าแทบทุกพื้นที่ ซึ่งเราอยากชวนให้ทุกคนมาค้นหาและค้นพบด้วยตัวเอง</span></p>

<p><span style="font-family: sarabun-regular; font-size: 12pt;"><span style="font-weight: 400;">นอกจากจะเล่าเรื่องราวเบื้องหลังของผลงานที่ผ่านมาแล้ว </span><span style="font-weight: 400;">จีรเวช</span><span style="font-weight: 400;">ยังแชร์ประสบการณ์การใช้งานพื้น terrazzo เพิ่มเติมกับเราด้วยว่า “ต้องเข้าใจธรรมชาติของ terrazzo ก่อนว่าเป็นงานทำกับที่ เป็นงานฝีมือ เป็นงานคราฟต์ที่คนเข้าไปทำ มีโอกาสเกิด hairline ได้ มีค่าคาดเคลื่อนนิดหน่อย เพราะฉะนั้นมันมีเรื่องฝีมือช่างเข้ามาเกี่ยว ที่เราเตรียมได้คือคิดเยอะๆ เรื่องการผสมหิน ขนาดของพื้นผิวและสี ต้องใช้จินตนาการเยอะหน่อยเพราะแผ่นตัวอย่างเล็กนิดเดียว แต่ของจริงเป็นผืนเบ้อเริ่ม โดยเฉพาะเรื่องสี เอาไปเทียบกับแสงจากสถานที่จริงได้ยิ่งดี”</span></span></p>

<p><span style="font-family: sarabun-regular; font-size: 12pt;"><span style="font-weight: 400;">และเมื่อเราถาม</span><span style="font-weight: 400;">จีรเวช</span><span style="font-weight: 400;">ถึงความประทับใจในวัสดุสำหรับงานพื้นชนิดนี้ เรื่องสัจจะวัสดุเป็นสิ่งแรกที่ถูกหยิบยกขึ้นมาพูดถึง “ใช้มาตั้งแต่เริ่มทำงานเลยนะ เพราะตรงกับความชอบของเรา ชอบวัสดุที่มาจากเนื้อแท้ของมัน ชอบความจริงของมัน สร้างสีของมันได้ มันกลายเป็นว่าสีนั้นเป็นสีของที่ตรงนั้น เกิดจากความจริง ณ จุดนั้น” พร้อมกับเล่าถึงความประทับใจอื่นๆ ที่ได้ค้นพบภายหลังเมื่อได้ทดลองใช้กับโปรเจ็กต์ต่างๆ ไม่ว่าจะเป็นความสามารถในการหล่อเป็นผืนใหญ่ รอยต่อน้อย การเล่นกับรอยต่อ และความยืดหยุ่นในการสร้างฟอร์มที่ต่อยอดจากพื้นไปเป็นเฟอร์นิเจอร์ เคาน์เตอร์ หรือผนังได้ด้วยวัสดุเดียว ก่อนจะปิดท้ายด้วยเรื่องความเป็นไปได้ไม่มีสิ้นสุดจากการ custom ส่วนผสมต่างๆ ที่เป็นเสมือนคำถามปลายเปิดให้กับสถาปนิก และแน่นอนว่าในศาสตร์ของการออกแบบ คำตอบไม่เคยมีถูกหรือผิด</span></span></p>

<p class="p1"><span class="s1" style="font-family: sarabun-regular; font-size: 12pt;">ถือเป็นสาขาที่สอง ร้าน Lay Lao ร้านอาหารไทย-อีสาน ตั้งอยู่ภายในศูนย์การค้า ICONSIAM (สาขาแรกอยู่ที่ ซ.อารีย์) โดยใช้แนวความคิดที่ต้องการให้ผู้ที่เข้ามานั้น รู้สึกเหมือนได้มาทานข้าวบ้านเพื่อน ซึ่งเป็นความทรงจำที่ได้รับมาจากวัยเด็ก ทั้งวัสดุอย่างไม้ โต๊ะหินอ่อน พื้นหินเทอร์ราซโซทรายล้าง ที่ให้ความรู้สึกคุ้นชินแบบเมื่อก่อน จึงอยากที่จะจำลองบรรยากาศนั้นขึ้นมาภายในร้าน ซึ่งเป็นแนวความคิดเดียวกันกับที่ใช้ออกแบบทั้งสองสาขา โดยที่สาขาแรกนั้น ผู้ออกแบบได้ทำการตีโจทย์พื้นที่ ให้เป็นเหมือนห้องรับแขก ส่วนสาขานี้นำไอเดียสวนหลังบ้านมาออกแบบพื้นที่ โดยยังคงเก็บรายละเอียดที่ทำให้นึกถึงความเรียบง่าย และความเป็นกันเองไว้เหมือนเดิม โดยสถาปนิกที่ได้รับโจทย์ในครั้งนี้คือ 67s ที่เป็นผู้ออกแบบร้าน Lay Lao สาขาแรกด้วย</span></p>

นอกจากรูปแบบการจัดวางผังร้านแล้ว วัสดุต่างๆ ที่เลือกใช้นั้นก็ผ่านวิธีการทดลอง และกระบวนผลิตมาเป็นอย่างดี เริ่มจากผิวหินขัดเทอร์ราซโซ่สำหรับบริเวณเคาน์เตอร์ ที่เลือกใช้ตามแนวความคิดหลัก แต่ปรับจากเดิมที่มีก้อนหินขนาดใหญ่ในชั้นพื้นผิวจึงมีการคัดเลือกขนาดหิน เข้าไปดูกระบวนการผลิตที่โรงงานเลือกเนื้อสี ทดลอง และเพิ่มรายละเอียดอย่างเปลือกหอยลงไปในพื้นผิวด้วย รวมถึงวิธีการก่อสร้าง เนื่องจากสถานที่ตั้งอยู่ภายในห้างสรรพสินค้า ทำาให้ไม่สามารถที่จะผลิตงานเทอร์ราซโซแบบหล่อในที่ได้ จึงปรับเปลี่ยนเป็นวิธีการผลิตเสร็จจากโรงงาน ซึ่งช่วยให้การจัดวางองค์ประกอบของก้อนหินและเปลือกหอยทำได้ง่ายกว่า จากนั้นจึงนำมาติดตั้งกับโครงสร้างที่เตรียมไว้แล้ว ช่วยให้การติดตั้งง่ายขึ้นและประหยัดเวลากว่าเดิม</span></p>

<p class="p1"><span class="s1" style="font-family: rm-regular; font-size: 12pt;">Lay Lao, the Thai-Isan restaurant recently opened its second branch at the ICONSIAM department store, following on from the success of its first branch in Soi Ari. The interior design of the new branch invites diners to reminisce about home comforts and quiet nights with friends. Materials such as wood, marble table tops, and terrazzo flooring render a comfortable sense of familiarity and nostalgia. Whereas the interior of the first branch was an interpretation of a family living room, the idea behind the new branch is inspired by a home garden. The same architecture firm that was responsible for the first branch, 67s designed the interior of Lay Lao ICONSIAM to echo concepts of simplicity and friendliness.</span></p>

<p class="p1"><span class="s1" style="font-family: rm-regular; font-size: 12pt;">A bamboo structure in the dining space is the most obvious trace of the architects’ home garden inspiration. Even the kitchen embraces the concepts from the restaurant’s dining space; designed for comfort, convenience, and functionality. The architects were careful to consider the kitchen’s flexibility in regards to any future changes or expansions, having learnt the importance of flexibility from their experience with the restaurant’s first branch. Since then, the architects have developed better design solutions for both the front and back of house. The new branch features larger tabletops to accommodate more dishes, as well as a corner-to-corner table arrangement for a more functional dining space.</span></p>
<p class="p1"><span class="s1" style="font-family: rm-regular; font-size: 12pt;">Aside from the composition of the space, the materials used in this project were selected through an intricate process of experimentation and production. The custom terrazzo finish of the counter was carefully selected for its size, color tone, and aesthetic details such as shells embedded in its surface. Due to the construction process inside the department store, the use of cast-in-place terrazzo was not an option. Therefore, selecting a prefabricated process was the best option, and it came with added benefits such as more control over the placement of shells and stones in the terrazzo finish. Another added benefit was the faster speed at which the terrazzo could be installed, along with the lower cost.</span></p>

<p class="p1"><span class="s1" style="font-family: rm-regular; font-size: 12pt;">Wood is another important material used throughout the restaurant, which helps bring the design concept to the fore. The wooden shelves by the countertop for example, remind diners of Thai peoples’ kitchens back in the old days. Rattan chairs emit the homey backyard garden vibe, while a darker shade of wood is used for the flooring to bring warmth into the space as a whole. The elegant interior design complemented by the excellent service and intimate atmosphere at Lay Lao, beautifully intertwines aesthetic and functional qualities in a delightful manner.</span></p>
